Well this debate back and forth is great. That being said, @Shadow Reaper is right in his assertion that CIG doesn't want "multi-role/general purpose" ships that excel at everything. We all know that would create a meta, and ship sales would basically die, with the exception of those few ships. I believe this is why we've seen a turn away from multi-purpose ships, and a push into more role specific.
Yes, we still have ships that wear more than one hat. We actually have many. Not arguing that. But those ships all have some handicap or another, so they don't excel at everything.

Believe me, I'd love to have a jack of all trades ship. I'd rather own a couple ships that can do all the things I want than 20 that do specific things each. But if CIG wants to keep funding this project, they need to create a need, the they need to.create something that fulfills that need. And role specific ships are just that.

So Huzzah to them for refining their business model, because frankly I'd rather see this game get funded and finished than I would see the general purpose/multi-role ship of our dreams.

I am in most agreement with Blind Owl here. I like that we have varied roles on varied ships. It introduces alot of gameplay and mechanics that haves the universe as a whole working like a well oiled machine once everything starts working together and introduces good teamwork for those that utilize it well.

Its more then funding. Creating ships that are not jack of all trades forces players to work together and strengthens the core player group and allows for player driven content and missions that will give the game far more life then what developers could ever hope to accomplish. I understand subjects like the StarFarer possibly loosing its ability to collect quantum fuel on its own is a sore subject for some and rightly so. But from a game play perspective it makes perfect sense as it drives cooperation between several pilots working together to archive the goal now of supplying quantum fuel. In fact this one change drastically increases the amount of possible player interactions from setting up an operation and the required protection from pirates who would also like to make a payday off the quantum fuel. Having more ships involved in the operation increases the chances that a pirate group would even be able to find the operation where a single StarFarer floating around a gas giant would be a very difficult target to find. So instead we have content that asks players to work together to achieve a goal and even if they get raided and loose their ships and cargo to the pirates the experience has the real potential of binding them together in ways no story driven content could ever hope to achieve.

I like the layout and functionality of the ship, but since I already have an Origin 315P and an Anvil Carrack, I'm not sure I need it.
Can anyone think of any reason to have more than one exploration ship?

Ship size and mission role. Larger ships will require more crew and have inherently more operation cost. Also there will be jump gates the Carrack will not be able to utilize. For me I see the Corsair being on the cheaper side to operate and be a great complement to pirate raiding parties as it can join the fight where other explore class ships lack the firepower. Even the Caterpillar fits in this role of providing more firepower over other transport ships. I can easily see a pirate hunting party being a Caterpillar, Corsair and two Cutlass Blacks. While the Cutlass's might lead the charge against the beer merchants the Caterpillar and Corsair would be engaging as well.

One suspects there are many parts of exploration you simply won't be able to participate in with a small ship. We don't really know, but that would be in general keeping with the philosphy of most online games, that those who collaborate best with others really obtain much more power and effectiveness as players. Groups working together will always be much better at complex tasks than people who play alone. So for example, you may find in exploration that the ancient ruins you found can't be explored effectively without surface transport, which means you need one of the bigger exploration craft. That sort of scenario would seem to me likely. Also, players will find that they try to lock each other out and take control of finds as assets, and if a team of 10 aboard a Carrack decides to try to deny a lone player access, that could happen. No word yet whether you earn a criminal stat for killing someone outside the auspices of the UEE, and if not, exploration is going to be very dangerous work. That's a reason to play with others.

Indeed. Group exploration vs solo. Easy enough to fly a 315p through a small jump hole and go find a new system, planet, etc. But are you going to use that little ship going to be able to map out that system, explore the planets, scan in depth all the asteroid fields, etc.

I love that there are levels upon levels of depth to the different aspects of the game. Sure, you can accomplish lots alone, but together...

To be fair, its only one ship, and thats the Valkyrie, and even they cant come up with a convincing excuse as to why it cant do it (ill give you a clue, its to sell more ships).
Oh no, they had the same debate when the Hoplite debuted, and they had had it previously with the Tali when they added a modular version to the original bomber (I think they relented and added plates?) and afterward with the Prowler and the Terrapin. Every time a military design that has room for cargo is made available without cargo plates, the same tussel ensues.

I'm not sure how it worked out with the Tali. Did it ever get plates?

Frankly I have no clue and no way to know now what my actual playtime is going to be like when the game is finally released years from now. If it's anything like now I will probably be very limited as far as attending scheduled activities so grouping on a regular basis with the same core set of folks may not be in the cards and I may end up flying solo a lot. I do know that I want to explore though and I know there are going to be times when the stars line up just right, so I've gotten exploration ships from the 315p up to the carrack. And yes, if the rumors are to be believed and I can actually shoot things now, I picked up a corsair for the rougher parts of space.
