Hmm, Ive been meaning to take a look at ESO.
What kind of build should I go for?
I like two handed big sword stuff or archer.
Does it work like Skyrim?
The way I always approached ESO is the same as I did any other Elder Scrolls game - I basically just played how I normally would play in those games (usually a sneaky archer/rogue character). At some point (as Adiran explained) you get the ability to swap weapons on the fly. This will also swap abilities as well as you are limited to 5 abilities at a time (and one "ultimate" ability).
The combat is similar to Skyrim in that you are actually clicking to attack, dodging attacks, etc... though it is of course more geared to an MMO so ranged attacks will "lock on" to you but attacks can also be blocked / countered. There is also dual wielding.
Also, if you are worried about picking a faction, you will eventually be able to play through the other faction's quests and zones after you "beat" your faction's story and reach level 50. I am still on my second faction. After level 50 you get "Veteran Ranks" (which they are talking about removing) and Champion Points. I am only a VR 5 (it goes to 16 or so I believe at the moment--- though they released an expansion recently so that may be higher). Champion Points are used for passive upgrades and are in a tree-like system via constellations. This part is pretty similar to how Skyrim did their leveling system.
The character builds are pretty free-form and by the time you max out your level/skill points you can essentially fit multiple roles - you get a lot of skill points by end game. The only thing the starting classes give you are three class trees with abilities for that class. Otherwise, everyone has the same weapon skill trees, guild skill trees, world skill trees, etc...
So while a DragonKnight would make a better warrior type build, there's nothing stopping you from starting as a Nightblade (rogue/assassin class) and still playing like a warrior/tank. Obviously if you are planning to do the whole min/max stuff and make as great of a character as possible, you'll want to pick the correct starting class for the abilities BUT if you just want to have fun with it and don't care as much about being the absolute best - then it really doesn't matter, just pick something that fits your playstyle.
So all in all - it has an Elder Scrolls feel, has really fun combat compared to other MMO's where you basically target something and auto-attack, and you can steal from NPC's and sell their crap - which I always love.
I haven't played a ton lately due to Fallout 4 / other projects but if you need any help let me know. I play on PC myself and picked the Ebonheart Pact faction - though you can communicate with people of other factions in ESO. You just can't quest/group with them. I think they just recently implemented cross-faction dungeon grouping though.
