4 gallons fresh cider from a local orchard (delaware)
200 oz raw honey
2 tbsp. Yeast Nutrient
1/2 tsp. Liquid Pectic Enzyme
2-1/2 tbsp. Acid Blend
1tsp. Wine Tannin
2 Packets of Wine Yeast: lalvin 1116 (tomorrow)

OG 1.110

I will let you know how it turns out...probably next year. Just getting around to bottling last years. Tastes good so far.

I used campden tablets in this batch. In the previous one, I did a slow pasteurization on the honey and 2gallons of the juice. It came out nice, but I think it dulled a little of the apple flavor

Yes, this is home brewing. In this case, it is more like winemaking, but it is about 18-20 percent abt instead of 12-14 normal tables wines have. This is done via fermentation and does not involve concentrating via freezing. Since I am live in a 2 adult household, my 5-10 gallons of production a year don’t approach the 200 gallons/year I am allowed.

This is one of the most anticipated Christmas gifts I give. A bottle to various friends and family is an easy but very personal gift since you personally crafted the libation.
