Oh man, I thought I replied directly to this! I must have got distracted with work. I'm glad you enjoyed it! I just brought another cut home from the butcher to do round 2. I think I'm going to make a spicy version this time along with what the original recipe. I got some Death Sauce for Father's Day that I'm dying (haha get it!?) to try.
It should also cure much faster now that I've got a dehumidifier in the basement. The room humidity was ~70% last time and it took over a week to cure what I sent you lol.
