If I can give you an advice from personnal experience, the success of french cuisine around the world is mainly due to its simplicity. Well you're singing the national anthem of French and I thought it would be hilarious if a Canadian made it sounds like he thought two Quebecois were plotting against Ottawa but then realized he couldn't let anyone know he spoke French.

I actually was a chef at one time in my life early life that is. I worked at an Italian restaurant called Vincenzo's in Omaha Nebraska for 3 or so years. Then I worked at Walt Disney world as a line cook for 3 years.(I quit because they never gave me my prep chef position I was promised years before when I was first hired) I still cook at home for my wife which she is always grateful for. I don't do it professionally anymore due to the low pay and the sudden flood of the market. That really suck that they treated you like that at Walt Disney, in France we still need around 20k cooks in the job market so there's plenty of room left. I find it funny that you don't like administrative stuff because I want to study the history of the japanese administration pre and post war (1868-2000), I'm truly fascinated by it's evolution and particularities. Administrative work is pencil pushing and telling people what to do and not to do.
