If you want to fight like a demon unleashed... and live to tell about it almost every time, Ghost to Super Hornet upgrade for sure imo. If passive exploration and a rover and snub appeals more, and having AI or player crew with you, then Connie for sure
One ship is get up and go, and survives like a boss under the worst of circumstances and could make you all kinds of $ on escort-type or security/protection missions. The other, not so much, but has the potential to earn you a buttload of $ by way of exploration or liited cargo, discovery and the selling of information that you have attained from your exploration
Other thing to consider is time. Hornet... get in, jump, fight, win. Go home, drink beer.
Crewing up and taking off in a Connie can take longer than you want at times versus the get in and go of a Hornet. If you work ten hours a day, wife, kids... Hornet or any non-crew ship you can hop in and do what you want is best

Another ship will be for pure cargo. Getting a freelancer Max I think. This will fund all my early $ needs in early game at release. A third ship will be Bounty Hunter Hawk. The buyback/layaway lets you indulge a little
Maybe get one ship just for you and one for "work" in game? We probably have at the very minimum another year, so saving up for the two ships that you want is not unrealistic with the current layway we have. You probably have enough time to stow away enough $ to have a Connie, a Super Hornet and keep your Prospector too, and you'd also have a rover and snub. Pretty sweet fleet imo!
You can have your cake and eat it too! This is the silver lining of the game taking so long <3
