This is the main reason I melted my larger ships in favor of smaller ones, I bought the Carrack but after reading several opinions on how NPC's vs PC and cost etc... I went back to a Freelancer Max, I have a Sentinel and Sabre and still money left over for something else. Once the PU is up and running and I get to know people better in the org and friends become more readily available then multi-crew ships will be more appealing to me, but randomly asking strangers to operate and run my ship seems to be a bit scary to me.
