Then have an epiphany, and come to realize that there is no light/medium/dark/flavoured/alcoholic maple syrup. There is just maple syrup, and how you decide to USE that maple syrup is what will define it for you. After your mind has been blown, sit down, and start thinking about how you really want to use the syrup going forward.
