You could try Yela, around the ArcCorp 157 or other mining outposts. There is a reason they are where they are at.

Soloflyer, if you head to Grim Hex, a bit outside of it you can see the "Nebula" or "Cloud" looking clusters of Asteroids. (See image I inserted above) Around those, you can find mineable asteroids pretty easily.
