I see you like your pieces thick!

When its at that stage of dryness, its easy to eat, but when its dryer you may want to cut the pieces almost paper thin.

What do you mean by better cut of meat? Was this piece not shaped right or was the fat in the wrong places?

Vacuum sealed should be fine, I have bought biltong both vacuum sealed and in a sealed ziplock type bag but with silica gel bags to absorb moisture. Those where shipped to me from Colorado.

As far as the cut goes, this one had some serious internal marbling. Nothing to ruin the batch or anything, but enough to make it tough to chew. I'll probably use eye of round for the next batch anyway. It's my preferred cut for jerky.

Not all the pieces will have that marbling, you will see the other strips will be a lot leaner.
If this is too chewy, let it dry a bit longer!

I also forgot to mention that I leave a small amount of ground coriander to sprinkle onto the meat before I hang it for some extra flavor. You can also sprinkle some hot red pepper flakes if you prefer it more spicy!

May is on the way, I hope Montoya is getting another recipe ready...

...My money is on Beer Battered Onion Rings to go with the meat. In another few short years we wil have enough recipes to make a whole TEST bbq, probably finished just in time for the game to be completed!

Normaly, I should be currently dehydrating some meat for our dog but this post turned out for the worse for our canine friend : I'll try your recipe instead : if the dog complains about me eating all it 's food, I'll add (more) beer to it 's water!;)
